400g boneless, skinless salmon fillets
150g Sea salt
1 Orange- zest and juice
1 Vanilla pod
1 Nashi Pear (to serve)
Green salad to serve
1 Persimmon to serve
100ml Extra Virgin Olive Oil
1 Pinch of Salt
