Our market manager Louise made this peach cobbler for her flatmates from organic peaches lovingly grown by Tikapa Moana- and it was very well received! A perfect dessert as the weather starts to cool.
8 ripe peaches, stoned and cut into wedges
1 vanilla pod, halved length ways and seeds scraped out
zest of 1 lime
40g of brown sugar
zest and juice of one orange
2.5cm of fresh ginger, peeled and finely grated
For the cobbler topping
40g of pinenuts (can be substituted with other nuts)
100g self raising flour
50g caster sugar
100g of unsalted butter, chilled
icing sugar to serve
vanilla ice cream to serve
